Crumb Broccoli

Ingredients:


12 oz. broccoli florets
¼ cup red bell pepper (finally chopped)
¼ cup red onion (finally chopped)
1 each garlic clove (crushed, peeled and chopped)
1 cup bread crumbs
¼ cup olive oil
½ cup parmesan cheese (grated)
¼ cup parsley (chopped)
salt & pepper to taste

Directions:

Steam broccoli until bright green, 2-4 minutes.
Sauté onion, pepper and garlic in the olive oil until tender add the breadcrumbs and continue cooking while stirring until crumbs are golden brown.
Add parmesan cheese and parsley, toss with broccoli.
